
French Riviera Seafood Pasta!!
The Recipe!!
~ 1 lb of squid Calamari)
~ 6 Cherrystones or “little necks”
~ 1 Lb of mussels
~ 7 Oz of Chorizo or Andouille sausage, chopped
~ 2 9 oz. packages of Pappardelle fresh pasta
~ 24 oz jar of Italian plum tomato sauce
~ 1 jar of spicy salsa
~ Grated Parmesan
~ Fresh lemon
La Methode!!
Boil a large pot of generously salted water for pasta. Place both jars of tomatoes in a large pan as seen in my video( I use a 14 inch mineral steel pan from France De Buyer). Add chopped sausage mussels to sauced cover. In about 7 min, add the cherrystones and cover again. 3 minutes later add the squid and cook covered for another 3-4 minutes.
While the squid is cooking, place FRESH pasta in the boiling water and cook for about 3 minutes.
Top the seafood with a generous pinch or two of granulated garlic and salt and mix gently. Place the pasta in a large bowl and top with seafood and tomato sauce. Top with Parmesan and fresh squeezed lemon!
