Grilled sweet corn and tender leek are married for a summer time flavor that is absolutely fabulous. Leek is essential in French cuisine and corn is quite popular in the region around Lyon where it is grown. Make some friends with this summer time powerhouse of a recipe!
The Recipe!
~~~~~~~~~~~
3 ears of sweet corn
2 leeks
1/4 cup of extra-virgin olive oil
Salt and pepper to flavor
La Methode:
~~~~~~~~~~ Cut root end and 3/4 of the green off of leek, cut in two lengthwise and clean under running water. Cut lengthwise both sides again (quartered) and chop into 1 inch segments. Toss chopped leek with oil in a large bowl and roast over hot charcoal fire in a wire grill basket until slightly charred, about 10 minutes.
Grill husked corn, turning often until nicely charred, about 10 minutes. Cut kernels off the cob.
Combine leek and corn in large bowl and season with salt and pepper to taste. Voila!
I love leeks. Especially when I cook them with sliced carrots. I will absolutely try this recipe out with the corn.
Leeks for everything!!!! Thanks Dawn! Enjoy!!
