Are these really French ? Betcha sweet aspic they are!!
The Recipe!
3 medium potatoesFresh rosemary
Sea Salt
Fresh Cracked Pepper
Parmesan Cheese or finely grated cheese of choice
Extra virgin Olive Oil
Slice 3 medium potatoes medium to thin length-wise or to desired thickness.
Rinse and soak in cold water for a few hours to overnite in the fridge.
Drain potatoes and prepare large pan for frying by adding a oil so that it is 1/3 filled (I use extra-virgin olive oil) on a medium heat. When oil is heated, place some of the potatoes and place a few tablespoons of chopped rosemary and a few pinches of salt .
Work in small batches and cook for about 8 minutes, stirring occasionally with tongs. when barely browned, remove. Remember work in small batches.
Let the fries rest and cool. You may perform this step early in the day or even the day before.
When ready to serve, reheat oil ( add more if necessary as well as another tablespoon of finely chopped rosemary) and re-fry the french fries until golden brown.
Add chopped rosemary, salt, parmesan and fresh cracked pepper immediately as you remove each batch.
These will be the finest fries you will have ever had!
I never thought to add some of the ingredients into the oil. Those fries look so good and I bet they have that ‘nice crunch’ to them too.
Hey Dawn! In fact after putting the fries in the oil, put the rosemary, salt and stir in as it infuses the oil as well getting on the fries. Parmesan sends it into the stratosphere!
