Poulet Bernier

The Recipe!

2 boneless, skinless chicken thighs per person. You may use breast, but it will not be as tender and tasty.
2 large sweet onions
1 lb of finely chopped mushrooms
Extra virgin olive oil
Sea Salt
Fresh cracked pepper
Finely chopped rosemary

Saute chopped onions and mushrooms in a pan with a several tablespoons of extra virgin olive oil, a few pinches of salt and a several grinds of the pepper mill. Cover and stir occasionally, cooking over a medium heat until the mixture reduces to half the volume.

Meanwhile, pound out chicken pieces thin. When onion and mushroom mixture is done, spoon a few teaspoons of mixture in the very center, and roll the chicken carefully. It will stay rolled if you handle it with care. You can use toothpicks to hold it together, but this usually makes more of a mess trying to do it.
Heat 1/4 cup of extra-virgin olive oil on a low-medium fire and gently place chicken in pan. When browned on one side in about 7 minutes, turn. Brown all four sides if possible.
When chicken is done, heat onion and mushroom mixture in the microwave for 3o seconds and spoon over chicken once it is plated.You may place chicken on mixed greens for a beautiful dish. Top with chopped rosemary and fresh ground pepper.

    Denie, Well my friend, I have had so many hits against me to make your pork with orange and maple…I bought the goods and then was slammed with pnuemonia. Sick for almost a month! But I did manage to put this meal together when I had a bit of vigor (a bit!). I added a little bit of herbs and at the end made a pan sauce with a little white wine….so good! Thank you…enjoy your recipes, so keep it up! I swear, your humor–could fit right into my family….smiles!
