Poulet Citron

Here I have for you an old French recipe that I remember my mom preparing in the kitchens when I was a young man. The scent of citrus wafted through the air and made such a wonderful aroma. I remember the combination of sweet and savory that I would go (and still do) go crazy for. Do it French style and use the thigh meat – it will reward you with immense flavour and tender texture.

The Recipe!

12 chicken legs/thighs
Zest and juice of 4 lemons
1 teaspoons of brown sugar
Sea salt and fresh cracked pepper
1/4 cup of maple syrup

 

La Methode!

Pre- heat oven to 375.
Place chicken in large sheet pan and sprinkle with salt and pepper. Bake for 35 minutes.
Put chicken in the oven while you work on the sauce.
Zest and squeeze lemons in a (small)saucier pot. Add sugar and reduce on a low-medium heat for 5 minutes. Add 1/4 cup of maple syrup and reduce for another 5 minutes. Brush lightly on chicken 10 minutes before chicken is finished. In almost less than 30 minutes you have a very tasty main course served with rice and salad of choice!
