The flavors in this dish are truly amazing. Go amaze someone. In less than 30 minutes.

The Recipe!

~ 2 chicken thighs per person
~ 1 cup of shredded Gruyèye, Emmental, Compté cheese, or cheese of choice
~ 1 cup of Creme fraiche (one cup of sour cream and one cup of heavy cream mixed well)
~ Mixed greens
~ lemon juice
~ Herbs de Province
~ Butter
~ 3 shallots chopped fine

Melt one tablespoon of butter in a pan (the same pan you will use for the chicken) and sauté shallots until tender on a medium fire.
Place 1 cup of creme friache in a small saucier pot on the back right saucier burner on lowest heat setting. Add sautéed shallots, one teaspoon of herbs de province, i tablespoon of lemon juice (1/2 of a lemon) and 1/4 cup of shredded cheese.
Melt 4 tablespoons of butter in a pan on medium heat. Add chicken to pan, seasoning with sea salt and fresh cracked pepper and brown both sides until chicken is cooked (about 8 minutes). After turning chicken the first time, top chicken piece with a few tablespoons of shredded cheese. This will melt nicely by the time the other side browns.

Place cooked chicken on a small bed of mixed greens and top with sauce and a sprinkle of Herbs de Province.

Bon Appetite!

Hi Denie, been missing your videos…just thought you might like to know I am making this dish tonight as we wait for hurricane Isaac to come in….writing before we lose power. So think about your dish being enjoyed in a cozy house with the wind and rain whipping around outside! Better get the wine and candles ready. Thanks for the recipe!
Hope all is well with you and yours.

      Hey Amy!!
I am so glad to hear from you! First of all – I hope you are fairing well in hurricane Isaac. Let me know how things unfold for you. I pray you just get a lot of well deserved rain.
Next, I’ve been working on developing new recipes for my cookbook. This requires less time behind the camera making films. So, that is why I’ve not made one in a while ( I miss doing them!) I will be back soon to making them – in a few weeks or so. Also, if you friend me on Facebook, you will get updates as to a new radio show “All Things Food” that I have been asked to be a part of by the host of the show. I will send you an mp3 file of the first show. It was paired down to the 1/2 hour I was on so you dont get too bored.
Thank you for the cozy mental image of your house in storm approach mode!! I hope you enjoyed the dish!!
      Your New England Friend,
      Denie
