You cannot imagine the rich Flavours of these fresh ingredients combined. Trust me, it’s fantastique!
The Recipe!
3 medium ripe tomatoes (heirloom if you can get them) chopped roughly
1/2 cup of oil-cured black olives chopped fine
1 large (about the size of a small egg) or several small shallots chopped fine
1 avocado (roughly chopped) mixed with 1 teaspoon of lime juice to prevent browning
2 generous tablespoons of roasted sesame seeds (roast on tin foil in 350 oven for appx. 10 min – watch closely to not burn)
2 1/2 tablespoons of balsamic vinaigrette
1 generous teaspoon of honey
1 teaspoon of brown sugar
2 tablespoons of ROASTED sesame oil
1 teaspoon of Herbs De Province
Sea salt and fresh cracked pepper to taste
Blend all of the ingredients in a bowl. Stir well. This recipe taste even better the next few days when the flavours combine and develop. Hint: I have developed a method for ripening a hard/unripened avocado instantly(like most are at the market). Simply pound it hard on the table on all sides until it feels very tender. This breaks down the fibers so that it has the nice soft texture and consistency of a ripened avocado.
