Pan Roasted with Cauliflower Gratin

Seriously amazing flavours in a stunning collection of cauliflower blended with sautéed shallots, sour cream and grated cheese and pan roasted sweet red pepper atop sautéed chicken in extra virgin olive oil, coarse sea salt and fresh cracked pepper. 30 minutes to make. No kidding.

The Recipe!

3 Large shallots or two medium onions
1-2 chicken thighs or breast per person
1 fresh cauliflower head
1 1/2 cups of shredded Gruyère cheese
Extra virgin olive oil
1 Large sweet red pepper cut into strips
Sea salt
Fresh cracked pepper
1 cup of sour cream

Sauté shallots (or onion) until golden in color with a pinch of salt and pepper.

Cook cauliflower pieces in a pot with 1/4 cup of water until tender. Add sour cream, 1/2 of the sautéed shallots, cheese, several grinds of the pepper mill and a touch of salt if needed. Blend with an immersion blender or blend in a blender until smooth. Keep on a very low flame, stirring occasionally.

Place red pepper strips in a pan with 4 tablespoons of extra-virgin olive oil, pinch of sea salt, several grinds of the pepper mill and cook on a medium heat until slightly charred, stirring with thongs. Shut off heat when done.

Sauté chicken in extra virgin olive oil, adding sea salt and fresh cracked pepper until slightly golden on both sides on a low heat.

Top chicken with cauliflower puree, sautéed shallots and red pepper strips.
Wow. As beautiful on the plate as on your taste buds.

    I came upon your website while searching for Jacques Pepin recent updates. What a find! Your videos and recipes are amazing and for starters, I can’t wait to try the chicken cauliflower as well as the Roti de Boeuf. I briefly met Jacques and attended two of his dinner events while he was here on the west coast filming Essential Pepin. I believe he will be attending the Pebble Beach Food and Wine Tasting in Carmel, CA.
