Chicken Crust Pizza!!
This AMAZING crust is a total protein bomb and great for anyone reducing carbs while still satisfying their craving for our fav food group….PIZZA!!! This is SUCH a simple recipe that uses left over roast or rotisserie chicken. Satisfying beyond measure because of all to the protein, and guilt free from the wheat!!
The Ingredients:
The crust:
– 12 oz of roasted or rotisserie chicken
– 1 cup of shredded cheese of choice
-2 eggs
The Sauce:
4 oz of tomato paste with 2 tablespoons of extra virgin olive oil, herbs and spices of choice and a healthy dash of brown sugar.
Toppings:
1 cup of mozzarella and any other toppings of choice!
Method:
Chop and mince the chicken finely, then blend in a bowl with the eggs and cheese by hand. Add a sprinkle of garlic powder and a generous pinch of sugar. Place mixture on a large piece of parchment paper and press out by hand or rolling pin to about 1/4 inch. Place in a 400 degree oven for about 15 minutes, or until slightly golden brown.
Remove from oven and place 4 oz of tomato paste mixed with 2 tablespoons of extra virgin olive oil, herbs, garlic powder and a healthy dash of brown sugar. Top with 1- 1/12 cups of mozzarella and any other additional toppings. Return to oven and remove when the cheese has melted, about 7 min.
