All right my friends, if you want a dish that will make your friends demand the recipe – here it is. Marinated brussels sprouts are grilled with sausage and then topped with Gruyere cheese. Serious summertime flavors from the grill.
The Recipe! 1 lb of brussels sprouts 10 oz of sausage (I used saucisson/French dried sausage this time) Gruyere cheese
Marinate __________________________________ 2 cups of water 2 cups of brown sugar 1/2 cup malt vinegar 1/2 cup of soy sauce 2 tablespoons of toasted sesame oil 1/2 cup of extra-virgin olive oil Several grinds of the pepper mill
La Methode
Blend all of the ingredients together with a whisk and add brussels sprouts. Marinate overnight or at least 8 hours in the refrigerator, stirring a few times as they marinate.
Grill brussels sprouts in a wire mesh grill pan over a hot charcoal fire with sausage placed next to grill pan. When they are both nicely charred, remove. Place brussels sprouts back in marinate for 10 minutes. Slice sausage into disks, remove brussels sprouts from marinate and put both sausage and brussles sprouts in a large bowl. Grate about 1/2 cup of Gruyere cheese and blend with dish. Top with ribbons of cheese, done with a vegetable peeler. Voila!
